Today, I’m sharing one of our favorite Sunday suppers: Baked Pork Chops with Roasted Vegetables, Fresh Dinner Rolls, and a Sweet Southern Peach Cobbler for dessert. It’s hearty, cozy, and filled with the flavors of home.
Southern Weekday Supper Menu
Baked Pork Chops
Ingredients:
• 6 bone-in pork chops (about 1-inch thick)
• 2 tablespoons olive oil
• 1 teaspoon smoked paprika
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1/4 teaspoon cayenne pepper (optional, for a little heat)
• 1/4 cup honey
• 1 tablespoon Dijon mustard
Instructions:
1. Preheat your oven to 375°F.
2. Rub the pork chops with olive oil. In a small bowl, mix the smoked paprika, garlic powder, onion powder, salt, pepper, and cayenne (if using). Rub this seasoning blend evenly over both sides of the chops.

2. Roast in the oven alongside the pork chops at 375°F for 25-30 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
Fresh Dinner Rolls
Ingredients:
• 3 1/2 cups all-purpose flour
• 1 packet (2 1/4 teaspoons) active dry yeast
• 1 cup warm milk (about 110°F)
• 1/4 cup sugar
• 1/3 cup unsalted butter, melted
• 1 large egg
• 1 teaspoon salt
Instructions:

• 6 tablespoons cold unsalted butter, cubed
• 1/4 cup boiling water
Instructions:
1. Preheat your oven to 375°F. Toss the peaches with sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Pour into a 9×13-inch baking dish.
2. In a bowl, combine the flour, sugars, baking powder, and salt. Cut in the butter with a pastry cutter until the mixture resembles coarse crumbs. Stir in the boiling water to form a soft dough.
3. Drop spoonfuls of the dough over the peaches. Sprinkle with a little extra sugar if desired.
